Description-

Oyster mushrooms get their name because they resemble the appearance of an oyster. They have three distinct parts: a fleshy shell or spatula shaped cap, a central stalk and long ridges and furrows underneath. 


All parts of this mushroom are edible. The stem can become a little more dense or woody as you get to the base. Slicing or chopping finer as you go will help give a more even texture while you cook. 


Taste- 


Phoenix Oyster Mushrooms have a mild, soft, velvety, sweet flavor reminiscent of anise with earthy notes. This mushroom is one of the best “everyday mushrooms” and can be used in almost any dish. Cooked oyster mushrooms bring a soft, meaty texture to many dishes. 


How to use the mushroom-


Oyster mushrooms are great for braising, sautéing, roasting, frying, grilling, and stir-frying. 


The Phoenix Oyster Mushroom flavor is mild and is suitable to be used as an everyday mushroom being incorporated into soups, stews, salads, pasta, on top of pizza, casseroles, and terrines. They can also be layered in sandwiches, stir-fried with other vegetables, or sautéed and served as a stand-alone side dish. Phoenix Tail mushrooms pair well with fish, lamb, pork, poultry, green onion, shallot, garlic, ginger, Brussel sprouts, kale, green beans, celery, water chestnuts, sunchokes, farro, quinoa, grits, and potatoes.

Storage-


Our favorite way to store mushrooms is to chop them right away, store them in the fridge in a glass bowl with a wet paper towel on top. We’ve been able to use the mushrooms for 1-2 weeks. 


You can also keep them in the container you bought them in, in the fridge and they will last 3-5 days. 


The trick of long lasting mushrooms is letting them breathe while making sure they don’t dry out. 


They can be frozen either raw or in a sautéd or stir-fried state, as long as they are stored in an airtight container or a dedicated freezer bag.


You should never eat oyster mushrooms raw.
