Even just a small amount of dehydrated mushrooms will add enormous flavor to a dish. Dehydrated mushrooms are often listed as an essential pantry item by many accomplished cooks. They pack a lot of flavor, are easy to store and don’t go bad.
When mushrooms are dehydrated their rich, earthy, umami flavor is exponentially more concentrated. Dried mushrooms bring a substantially meaty, earthy flavor to vegan dishes, too. They're an all-around fast-flavoring ingredient you'll want to always have on hand.
How to Prepare Dehydrated Mushrooms-
The best way to reconstitute dehydrated mushrooms is to soak them in water. It seems room temperature water works just as good as any other temperature and it doesn’t take away as much flavor as hot water would.
This produces two wonderful things: the mushrooms themselves and their flavorful soaking liquid. Both can be used in soups, stews, sauces, pâtés, gratins and many other dishes. Dried mushrooms add a rich, meaty, savory note and are high in umami.
Storage-
Dehydrated mushrooms last indefinitely if stored in an airtight container in a cool, dark place. How can you tell when they're no longer at their peak? If you smell them and they just don't smell like anything. They won’t go bad or spoil, they will just lose their flavor over time. If you think your mushrooms have lost some flavor you can simply add more to your dish.
If you don’t want to use the re-hydrated mushrooms or the soaking broth right away, store it in a covered container in the refrigerator for several days or freeze it for even longer.
